Farmer's Market Squash


Today's loot from the farmer's market. I had no idea how many types of squash there are until today. I saw tons of French varieties, heirlooms and look forward to trying out a whole new world of flavors. Here are the few I picked up...

- Dark Green : Buttercup squash
- Orange : Kabocha squash ( it grows in a green shade too)
- Beige : Butternut squash

  2. Butternut! I love it with sage in lasagna or ravioli and with black beans in a taco. Or just roasted with olive oil and salt. Delicious.

  4. My husband just made the most delicious acorn squash pie from our CSA. It tasted like pumpkin pie but was better...i definitely advise trying it!

  5. I love all kinds of squash! One of my favorites is oh-so-simple but such a favorite for fall - acorn squash baked with a pat of butter and sprinkle of brown sugar...mmm so good! I just made a Jamaican pumpkin soup over the weekend that had pumpkin and butternut squash that was awesome! You can't go wrong with squash ;) Enjoy!

  8. You can't argue with a great butternut squash soup, but I do enjoy a baked acorn squash with butter and brown sugar too! Ah fall foods, I just can't get enough!

  11. my boy friend is an organic veggie farmer and this year he introduced me to Delicata squash! you slice it in to rings and scoop out the seeds. bake the rings with a drizzle of olive oil and a dash of salt- it is like candy!

    Delicata all the way. Love it alone, roasted or pan friend, or mixed with quinoa, kale, cumin seeds, basil and goat cheese. yum.
