Lunch
Here is a snippet of what I ate for lunch today. It was delicious and super easy to make, ingredients : tomatoes, mozzarella, lemon basil (from our herb garden), balsamic vinegar, cracked pepper. For the past 2 weeks we've been eating quite different than we usually do, it has been a challenge... more on that later.

Looks yummy! I find that most of my meals turn out to be like this during the summer-complete with a glass of wine and it's perfect!
One of my favorite summertime lunches! I never get tired of it.

I too will never tire of that combo. And the fresh lemon basil! Perfect. I am going to see if I can find lemon basil at our grower's market this weekend.
It looks delicious AND healthy!
My absolute favorite salad. Mine is never presented as beautifully as you have here... but I would live on it if I could!
That looks so good! I can't wait to hear all about your changes in eating!
I've been eating this all day yesterday :) except, I used creme cheese instead of mozzarella, but it's great this way too! Isn't it lovely to eat fresh vegetables? Yum!
