Finally... healthy recipes that actually taste good.
For my 2011 goals I am focusing on one element a month I want to improve in my life and for this month of January it is 'healthy'.
Along those healthy lines, I've got a new friend in the kitchen and her name is Ellie Krieger, are you already acquainted? A few months ago I checked out a few of her books from the library The Food You Crave: Luscious Recipes for a Healthy Life and So Easy: Luscious, Healthy Recipes for Every Meal of the Week and I am hooked.
Not only are her recipes delicious but since she is a registered dietitian they are spot on full of healthy ingredients along with caloric and nutritional data so you really know what you are getting into.
Here are my top ten favorites recipes of Ellie's that I have tried, so far:
1. Lemon Chicken Orzo Soup

4. Aromatic Beef Stew with Butternut Squash

I used to work at Food Network and had the chance to work on a column with Ellie for FN.com. She's wonderful and I agree that her recipes are too. I recently discovered Kim Boyce and really want her cookbook Good to the Grain.
I am also a fan of Ellie Krieger! My favourite recipe in "The Food You Crave" is the aromatic noodles with lime peanut sauce. The turkey meatballs and chicken chop suey are also very good!
I love the idea of focusing on a different resolution every month, kudos. I to www.101cookbooks.com for all of my healthy recipe ideas. It is a blog where she features recipes from her massive cookbook collection.

I love her nutty granola recipe. In fact, I just baked a batch this morning!
One of my favorite recipes is by Ellie Krieger! This Chicken Pot Pie is so delicious and comforting. And it's healthier than any other recipe I've come across. I just sub in whatever vegetables I have around the house.

i have seen her show a couple of times but always hesitated to try the recipes, i was worried that they wouldn't taste good. now i'm excited to try them!
i just got "the family dinner" cookbook by laurie david for christmas and i am so in love with it. there are tons of meatless recipes and all the recipes are quite healthful. i haven't tried any of them yet but i can't wait to. also there are tons of ideas about making family dinner fun for everyone. it's such a great book i'm recommending it to everyone!
The lemon chicken orzo soup sounds delicious! We're expecting a baby, and I'm in that delightful stage where NOTHING sounds good and I gag just thinking about food, but somehow, that soup seems like it would hit the spot!
I'm going to need to try my hand at these recipes -- yummm they all look so good! I've been using Deceptively Delicious by Jessica Seinfeld to get more veggies into our daily meals at home, too.
I love Ellie too! She is on my favorites list. You know what I just found that helps me, is organizing my recipes into folders, so I can quickly look up dinner or breakfast or salad/soup! Now I want to try and fix a shopping list in the evenings so I know what I can cook the next day.
I'm not too familiar with Ellie Krieger but her recipes sound tasty. An new favorite in my house is The America's Test Kitchen Healthy Family Cookbook. We recently made chickpea cakes with cucumber-yogurt sauce. Not only was it a healthy version of falafel, it was delicious!

Her pork chops with apple slaw - amazing. One of my favorites for sure.
i recently found a great cook book called 'power foods' has a forward by martha stewart. i've been trying out the recipes and they are delicious and very good for you. they also have a caloric break down and at the beginning of the book educates you on why the food used in the book is so good for you. its not weird healthy food that you have never heard of either. it is normal things done up a little bit differently/things at least i would never think of. YUM!
I'm a food blogger, but also very concerned with health and fitness as part of my lifestyle. My goal this year is to really beef up the "healthy" category on my blog! I love finding tricks to take indulgent recipes and make them lighter. Check out some of my healthy posts!

Mmm!~ I stopped eating out early this winter. And i've slowly become obsessed with cooking and how yummy Ellie and Jamie Oliver's recipes are! The Lemon Orzo soup was my "gateway drug" this fall. Haha.
I kinda wanna cook everything I can now, and make a cookbook or cooking zine this year.
