Cupcake Bonanza
Our whole household has been in cupcake mode, it pretty much smells like coconut and chocolate heaven, wish I could send you a whiff. My husband had the ambitious idea of making 250+ cupcakes for a work gig, crazy huh? He was at it all day yesterday and we worked into the night with a bit of assistance (thanks Holly and Caitlin). It was a blast, although we had a few quirks regarding packaging and transport. The next time we make cupcakes, one batch will seem like a snap. We have a new elevated regard for Cupcaketeers. (probably not a real word?)

This looks like such an awesome, and yet totally overtaking, project! When I made our wedding favors, five different kinds of cookies for every guest, it looked like our entire house was covered in cookies, as I had the brilliant idea to make them all over two evenings. How do you find places for hundreds of cookies to cool at once?
But they look awesome, I hope they're a big hit! Our cookies sure were!

Wow! Those look yummy. I've made Barefoot Contessa's Coconut cupcakes before and they are divine!! Way to go. If I ever need help baking over 200 cupcakes, I'll give you a call! :)

Wow! I'm impressed! Since we lack boxed mixes here (along with vanilla extract and brown sugar) I never bake anymore. I can't imagine doing 200+ cupcakes! I salute you!
I made those coconut cupcakes for my dad's birthday this summer and they were something delicious. very impressive!

Those from Barefoot Contessa are my favorite. Right after my husband made me some about 6 months ago we went into a upscale grocery and Contessa has a mix for those!
That's a TON of cupcakes... now you've gone and made me hungry; thankfully we have a great cupcake shop around the corner. So much for the diet!

As for transport, we ended up taking them out of the containers on the table and putting them closer together in large baker's boxes. Then we flattened the seats in our car and it all worked out.
Barret - They are French Tolix chairs I picked up at the Sundance outlet.
